Infinite storage
The patented DS® hot gas automatic defrosting system allows the HiChef to become an excellent storage system after each blast chilling cycle.
Maximum attention and maximum hygiene
Not all food is compatible with each other; some need a humid environment, whereas other need a dry one.
That’s why the Exploit asks you to confirm whether you need a dry cycle between the blast chilling and the slow cooking process, or not.
Then, to guarantee maximum hygiene, at the end of each operating cycle the system can be cleaned using a specific Friulinox detergent (designed to be aggressive on dirt but delicate on the machine) and rinsed using the supplied shower head conveniently stored in the drawer.
Finally, the Hi-Giene system with active ions allows the deep sanitation of the work chamber.

High capacity for rapid heat extraction from food
The Exploit guarantees the reduction of temperature.
Food has got two main enemies: oxidation and evaporation.
In fresh food, oxidation is the first type of damage which causes the spread of bacteria, compromising both the product's flavour and scent.
In cooked food on the other hand, evaporation leads to weight loss and compromises the food’s softness, scent and substance.
A blast chilling cycle with the Exploit guarantees a rapid reduction in temperature from +90°C to +3°C, thus blocking the wight loss, whereas the rapid transition from the temperature range between +40°C and +10°C also limits the spread of bacteria, thus extending the product’s life.

Freshness, flavour and delicious scents all year round
The medium and the long-term storage is only possible through blast freezing of the core in -18°C.
This process turns the liquids of food into micro-crystals that do not damage the molecular structure of food, thus preserving all their freshness and flavour.

Blast Chilling
After a sponge cake has been cooked, during its preparation, a sudden drop of temperature becomes the key factor in the success of any recipe.
After cooking, we block evaporation and consiquently the weight loss , thus leaving the product soft.
During the preparation we can use the +12°C cycle for doughs, the ideal temperature for the butter.
Blast Freezing
This function allows you to prepare large quantities of basic products or finished products, which once frozen with the Exploit will be available for customers at any time, carefully stored inside one of the Friulinox storage cabinets.
Thaw
Given that this is a very delicate function that may compromise the quality of the product, we work in an environment where temperature, ventilation and water content are always under control, giving products the time they need to reabsorb the liquids
Slow cooking
This function guarantees all the qualities of controlled, constant cooking, according to the different types of food and their flavours.
At the end of a cycle, the HiChef can automatically switch to Blast Chilling (+3°C), Blast Freezing (-18°C) or Hold (+65°C), and the meal is ready to be served.
Hold
Exploit exclusive: Once the meal is ready, you can preserve the temperature at +65°C until it is ready to be served without further cooking and weight loss, which would otherwise dry the meal out.
Thanks to the patented HMS® (Humidity Management System),
the Exploit maintains the ideal humidity rate inside the chamber, adding moisture to the product if needed.

The exclusive proofing cycles guarantee the right temperature as well as the right ventilation and water content of the dough : essential factors in making sure the yeasts do their job.
The product will always be perfectly proofed, soft, scented, and thanks to the HMS® (Humidity Management System), it will have just the right water content.
Moreover, thanks to the slow cooking function, your products will be preserved until they are ready for baking.
Meringue
Cooking meringue will no longer be a problem with the Exploit : thanks to the HMS® (Humidity Management System), which controls the water content during all phases of cooking, your meringue will be perfectly crispy and crumbly.
Once the cycle has finished, you can choose to chill the product at +10°C, which will be ready for sale.
Chocolate
The Exploit includes a function that allows the completely autonomous melting of large quantities of chocolate, without the need of an operator, keeping the water content under control for effective, long-term preservation.
Ice Cream Making
In the ice cream sector, ice-cream makers need to create not only a flavoursome, vibrant and well-balanced product, but above all, a voluminous product that remains unaltered in the window display.
Ice Cream Softening

The Exploit can quickly bring the ice-cream to the right temperature from the freezer which was previously stored, making its texture perfect and a properly preserved bowl of ice cream ensures that your ice cream display case is always full.
Once the serving temperature has been reached, and thanks to the DS® (Defrost System), the Exploit is able to preserve the perfect heat exchange without compromising the quality of the preserved product.
Blast Freezing
The Exploit freezes rapidly with a chamber temperature of -40°C, quickly hardening the outside of the ice cream.
This helps to ensure the right quality of the ice-cream and guarantee perfect delight (GELATO SERVICE CYCLE).
If on the other hand we wish to create a long-term preservation, we can let the product reach a temperature of -18°C (ICE CREAM STORAGE CYCLE).
Yoghurt
The Exploit is also useful for the production of natural yoghurt : the preloaded process involves the insertion of milk (brought to 42°C) and live lactic cultures, allowing the creation of a creamy and delicate yoghurt to serve your customers.
Fruit Dehydration
The fruit leftovers from the production of ice cream can be dehydrated and used to create delicious garnish or even to create glazed or natural decorations.

Blast Chilling
At the end of cooking we can reduce the temperature to block evaporation and weight loss.

Blast Freezing
After the cooking cycle, the product can be frozen without
creating any cracks in the structure. In this way the reheating
process will restore a freshly made product.
Proofer
All products can be processed, guaranteeing the right water content thanks to the HMS® (Humidity Management System).
If necessary, you can also run a proofing cycle without altering the product’s aroma, structure, flavours and features.
