Externally and internally made of AISI 304 stainless steel.

The chamber is suitable for GN1/1 and EN 40x60cm and the distance between levels is 8cm.

 The blast chillers are available in models with production per cycle from

18 kg/cycle to 60kg/cycle in temperature from +90°C to +3°C.

 A control panel with a multilingual LCD screen with I.F.R. and special programs Infinity, Smart On, Multy, Automatic, Saved programs and  Favourites. They have got a multipoint sensor and automatic defrosting.

The chamber for production cycles reaches -42°C at the desired speed with maximum speed (mod.TF101/72/102...).

PROGRAMS

“INDISPENSABLE”

The main types of Blast Chilling programs : With a  time function, a sensor function : Soft +3°C, Hard +3°C, fully adaptable in the center.

The patented I.F.R. system (“Intelligent Food Recognition”) with multipoint sensor and active control, modulates ventilation and refrigeration in a smart way to adapt any type of product.

In the event that the sensor should not be inserted into the core, the Flash unit will automatically activate the timed cycle.

Infinity : The cycle that functions with continuous chilling without stopping! 

Saved Programs : They make the chillers fully adaptable :  10 cooling  cycles that can be configured according to the needs of every Chef.

Favourites : For those seeking the ultimate customisation.

 Automatic : With selection of the load in minimum, medium, maximum, created by Chefs for any type of food (fish, meat, pasta, cakes, ice cream ...) via time and/or sensor.

Storage : After each blast chilling or freezing cycle using either the timer and/or the sensor, the unit automatically switches to the storage in order to ensure the safety of the products.

“EXCLUSIVE”

  • Smart on : Just put the product in the chamber and after a few seconds, the chilling soft +3°C program  starts automatically, without having to be activated from the control panel, keeping food safe with or without a sensor. Never seen something like that before!
  • Multy : For the loading of 5 to 20 timers, with the option of sensor-reading so as to follow the pace of the kitchen, assigning each food its own time.
  • Banqueting : Cycle dedicated to the world of catering, ideal for the preparation of products for banquets. Possibility of selection of the load in minimum, medium, maximum, 24h.
  • Vacuum : Cycle also dedicated to the world of catering, for the preparation of products before a vacuum stage. Possibility of selection of the load in minimum, medium, maximum.
  • Opistorkis 24h : An automatic freezing cycle for preventive and total reduction of fresh water in fish. The sensor detects when the food core temperature has reached -20°C, giving the machine the input to start the “24-hour devitalization” phase.
  • Anisakis 24h and Anisakis 15h : They are automatic freezing cycles for preventive and total reduction of fish products. For Anisakis 24h, the sensor detects when the core temperature reaches -20°C and gives the input to start the “24-hour devitalization” phase. For Anisakis 15h, the sensor detects when the core temperature reaches -35°C and gives the input to start the “15-hour devitalization” phase.
