A simple and compact control panel fitted on all the Lievitamatic Roll-Ins.

The principle that governs the Lievitamatic retarder proofing unit cycles is based on the management of a hygrometer probe for the accurate measuring and dispensing of humidity inside the equipment with which the Lievitamatic units are fitted as standard.

The temperature range can be selected from -2 to + 40 degrees.

The automatic function of "Baking Delay" to preserve the leavened product, up to 3 hours after the end of the automatic cycle, can be pre-set.

In addition, in order to offer the user options, it offers the possibility to manually manage the functions and processes of:

storage and proofing; stable control of temperature and humidity. Available for 20 or 40 EN 1 trolleys. They will be your night-time ally, ensuring you sleep peacefully.

Instead, it offers you the same quality and the same proving process control with its Roll In cabinets.

 

Easy management

The new range of Lievitamatic cabinets, counters and Roll In retarder provers has a humidity probe to monitor and precisely control the humidity inside the equipment. The temperature range can be selected from -2°C to +40°C on the standard models, and from -25°C to +40°C on the SUPER models.

An automatic baking delay function can be set to preserve the proven products up to 3 hours after completion of the automatic cycle.

The stainless steel fl oor cabinets for Roll In and Roll Through trolleys with bottom strip seal can house trolleys for GN 2/1 or EURONORM trays (600x800 mm).

  • System mounted on a single block structure with steps, which enables optimal use of internal space
  • Evaporator with high-power fan to ensure maximum cooling system efficiency
  • Compressor and condenser that can be removed from above for simple and easy maintenance or replacement
  • R134a refrigerant
  • Automatic condensation water evaporation device without electric power supply

 

CONTROLS AND SAFETY DEVICES:

  • Patented control able to maintain the correct degree of humidity and internal temperature of the Coldroom in order to create the ideal microclimate for the leavening process
  • Microprocessor control with n ° 2 probes (Coldroom and end defrost) of PTC type
  • Defrosting with the insertion of an electrical heater, only in case of freezing evaporator
  • Compressor protected by termic overload cut-out with automatic reset

 

HUMIDITY REGULATION

  • The inside humidity value (UR%) is controlled by the microprocessor, through an algorithm which guarantees the correct set value
  • For the production of humidity the appliance need a water connection
