  It defrosts if needed.

  It preserves, making itself as an irreplaceable and valuable collaborator in the kitchen.

THE ULTRA OFFERS YOU FREEDOM

THAWING : a cycle dedicated to the controlled defrosting of food, via time and/ or detection function.

Through the combination of warm temperatures and fan speeds, frozen food is brought to the desired temperature, saving time and preserving the organoleptic characteristics of it.

PROVIDING AND OFFERING CONTROL : cycles devoted to dough, allowing manual or programmed leavening of pizza, rolls, croissants, etc...

STORAGE : after each cycle of cooling and/or freezing, via time and/or detection function, the food is made safe through an automatic switching to chiller and/or freezer storage phase.

If necessary, the preservation mode can be activated regardless of the cooling cycle.

SAFETY

The Ultra chiller - freezer models have two new automatic programs, specifically to the “sanitation” of raw fish and designed to fully provide the market with safe, quality tasty dishes (tuna carpaccio, marinated anchovies, sushi, raw marinated morsels of mackerel, etc.).

ANISAKIS 24h, an automatic freezing cycle for preventive and comprehensive reduction of fish products.
The sensor detects when food core temperature has reached -20°C, giving the machine the input to start the “24-hour devitalization” phase.

ANISAKIS 15h, an automatic freezing cycle for preventive and comprehensive reduction of fish products.

The sensor detects when food core temperature has reached -35°C, giving the machine the input to start the “15-hour devitalization” phase”
